It started with a dream…
One of our owners, Kevin, had a dream of a sauce that sounded a little unexpected: take the warm, familiar flavors of pumpkin spice and put them on chicken. After plenty of testing and tweaking, Pumpkin Spice became a real Wings Over flavor, and guests got their first taste of it during its original limited time run in Fall of 2025.
Then, it was gone.
But apparently, our guests weren’t ready to let it go.
When we recently asked our guests which past flavors they wanted to see again, Pumpkin Spice came up again and again. It was one of the most requested sauces on our survey, making the decision to bring it back pretty easy.
So for October, Pumpkin Spice is officially back at Wings Over!
What Is Pumpkin Spice Sauce?
Pumpkin Spice starts with our Hot Honey and takes it in a completely different direction. We infuse it with cinnamon, nutmeg, cloves, and ginger, then balance those warm spices with sweetness and a touch of heat.
The result is a sauce that is sweet, savory, warm, and lightly spicy. The Hot Honey brings the sweetness, while the spices give the sauce its distinctive flavor and a little heat keeps it from becoming overly sweet.
It is a combination that feels familiar while still being distinctly Wings Over.
Why It Works on Chicken
There is a reason these spices show up everywhere once fall arrives. Cinnamon, ginger, cloves, and nutmeg each bring their own character, but together they create a flavor profile that is instantly recognizable.
With Pumpkin Spice, that familiar blend meets the salty, savory flavor of crispy hand breaded chicken. The contrast is what makes it work. The sweetness from the Hot Honey rounds everything out, while the heat adds another layer to the sauce.
The result is not a dessert sauce and it is not simply a sweeter version of one of our traditional sauces. Pumpkin Spice has its own balance of sweet, savory, spice, and heat.
Back by Popular Demand
The first Pumpkin Spice release was only supposed to be around for one season. Once it left the menu, though, we started hearing from guests who wanted it back, in droves.
That made bringing it back for another fall an easy decision.
Limited time flavors are a big part of what makes the Wings Over menu interesting, but bringing back a flavor that people genuinely missed is a little different. Pumpkin Spice has already had its first run, and now it gets another one.
If you tried it last year, October is your chance to get reacquainted with it. If you missed it the first time, this is your introduction.
